Place the chocolate chips in a microwave-safe bowl. Microwave the chocolate chips in 10 to 15 intervals, stirring well between each interval, until they are melted and smooth. Set them aside to cool.

Divide the ice cream mixture into 2 bowls. To the first bowl, add the cooled strawberry filling, strawberry extract and red food coloring. Gently fold all the ingredients together until well combined. To the second bowl, add about one-third of the cooled melted chocolate and gently fold to combine. Add the remaining melted chocolate and fold until well combined.
